A Week of Simple Healthy Meals: Day 1

Well today went well...I had an opportunity to really mess up the first day. But I didn't! On top of needing to do my cleaning job today, Hubby and I had to give our little man a chance to be honest about a couple situations we encountered over the weekend. A whole other post in its self, bottom line he confessed and knows we love him. Then all the sudden it was time to leave, no one had breakfast, lunch wasn't made and we had 10 minutes to get out the door. Lol! Everyone pitched in and We made it happen.

Breakfast: REAL oatmeal topped with banana, walnuts and honey. And an orange. Yum!

Lunch: Ham and Swiss on Rye with lettuce, tomato, mayo and grainy mustard. And an apple. Double Yum!

Dinner: Herb Roasted Chicken Breast with mashed sweet potatoes and steamed green beans. Pineapple.

Sorry no pictures today. Just glad I was able to eat the food much less pose it, lol!

A Week of Simple Healthy Meals: can't wait

So I haven't posted in a long time maybe cause I'm busy or maybe cause I am always trying to make it make sense. Trying to find a reason, as if just my regular every day isn't enough to journal about. Hmmm interesting! Could be something more to that...

Well today is Sunday, March 18th and I am excited to journal. I have a theme and that helps me for whatever reason.

I have been struggling with my weight for as long as I can remember. Mind you I am not morbidly obese, not obese at all. According to the American Health Institute at 5'4" my weight range is between 114lbs - 152lbs with a target of 133lbs. I think I may have been 133lbs in middle school, some 18 years ago.

I have done everything you can think of from Weight Watchers to P90X, supplemental juicing and even HCG drops at my heaviest of 170lbs. Each program had its highs and lows, it's positives and negatives but none of them worked long term for me. I just can't seem to shake the extra weight and keep it off. So, I have decided to try something revolutionary: good ol' healthy eating and exercise. I had planned to make an appointment with a trainer at our gym mainly to discuss nutrition but I was able to find a simple meal plan online and I'm gonna try that first.

The plan starts tomorrow and is great for my whole family so no need to make multiple meals. Yay!

Today's Morning Weight: 166.6 lbs

I can't wait to get started so today I begin by just picking one of the breakfast ideas and actually eating breakfast!

Here it is-
Breakfast: Bran Flakes with Almonds, Cherries (I used Dates) and 1% milk. I am still having my coffee with 2 Tbsp fat free or sugar free French vanilla creamer.



Lunch: not the greatest or on the plan but I made a decent choice. Cobb salad and a half a Reuben (I really wanted some St. Patty's day grub) and some vitamin water. All from the local deli after church. This could be my problem?!?
